After Labor Day I am going to be doing the 3 Day Refresh cleanse. I’ve been consistent with working out and am currently doing the 80 Day Obsession fitness program. It’s challenging and I love it. It’s fantastic that I can do it in my living room and there’s a new workout for each day of the program.

What I haven’t been consistent with is my nutrition. I typically eat low carb. I have all kinds of great low carb recipes on my other blog Low Carb Delish. But, as I have been exercising more, I have been allowing more carbs into my mouth, errr life. Okay, I know that I need some carbs, and I still have been losing inches with all the exercising, but sometimes I indulge on the wrong kinds of carbs.

No lie, I love the treats I make for the kids and the Mr, but I try really hard not to overindulge on them. For the most part I do okay, but I am looking to hit the reset button with this 3 Day Refresh cleanse.

I did a bit of research on the cleanse and there are some high-nutrient shakes, some fiber drinks and many, many vegetables. In order to get ready for the coming decrease in caloric intake and increase in vegetable intake, I have been adding more veggies into my diet at every meal. There is also a longer cleanse called the Ultimate Reset. I think I’ll be doing that one for New Year’s.

This bell pepper salsa recipe came about due to my 1) purchasing of too many veggies and desperately needing to use them and 2) searching for easy ways to get the most out of my vegetables.

The bell pepper salsa came out delicious, and there’s not one tomato in it. I ate an entire bowl in one day. Yes, my belly hurt that evening, but it was worth it.

There are so many different ways to eat this bell pepper salsa. Obviously, tortilla chips, but you can also put it on sliced cucumbers, Whisps, on your scrambled eggs, on a salad in place of a dressing, Beanitos or whatever you’d like!

Prep Time: 15 minutes

Total Time: 15 minutes

Ingredients

  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1/2 medium red onion
  • 3 jalapeños
  • 1/2 English cucumber
  • 1/4 cup chopped cilantro
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sea salt

Instructions

Chop bell peppers into very small pieces.

Remove the seeds from the jalapeños and mince as well.

Scrape off the seeds from inside the cucumbers and discard.

Chop the cucumber and onion into small pieces and add into the bowl with the chopped peppers. Mince the cilantro.

Stir all ingredients together and add lime juice and salt to taste.

Serve chilled.

Notes

If you aren't into hot salsa, reduce the amount of jalapeños.
