Rice Crispy Oatmeal Cookies Recipe

With children with food allergies to major foods, one thing I’ve had trouble finding a great recipe for (that he actually likes!) is cookies.

But with all my recipe ventures, I was bound and determined to figure something out for them. Every kid deserves to enjoy some yummy cookies every once in a while! While we aren’t big dessert people (my idea of dessert is something made from home-canned fruits….) I like having cookies on hand in my fridge or freezer for a little treat.

So, back to these Rice Crispy Oatmeal Cookies…I’ve tried a bunch of different allergy-free cookie recipes. I really have, but none of them have been a hit like this one! I knew it would be a keeper when I caught a little toddler hand sneaking another cookie off the plate they were cooling on.

I first began making this recipe several years ago, and I’ve made some adjustments to it over the years (which I’ve updated here), but it’s still a bit favorite. I love to make these whenever I have some extra rice crispies that I need to use up.

Here are a few simple things that you could add into this recipe if you don’t want to leave them plain.

Rice Crispy Oatmeal Cookies Recipe

How to make simple rice crispy cookies that the kids will love.

Ingredients

  • 1 1/2cupsFlouror Gluten Free Flour
  • 1/2teaspoonBaking Soda
  • 1teaspoonBaking Powder
  • Pinchof Salt
  • 1/3cupCoconut Oil
  • 1/2cupBrown Sugar
  • 1Bananamashed
  • 1cupCrispy Rice Cereal
  • 1/2cupOld Fashioned Oats
  • 1Egg

Instructions

  1. In a large bowl, mix together all ingredients. (You can use a stand or hand mixer if you prefer.) Make sure there are no lumps of banana or coconut oil (I soften my coconut oil first to help it blend better).

  2. Drop by teaspoon full (or use a cookie scoop) onto an ungreased cookie or bar pan (I recommend one with sides just in case the oil would drip). Cover the baking sheet with parchment paper first. You don't want it to be greased but you also don't want the cookies to stick.

  3. Bake at 350 degrees for about 6 minutes or until the cookies are just brown around the edges. (Yours may need to cook a little longer, my oven seems to cook these very quickly).

  4. Cool the finished cookies on a wire rack so that they can firm up and get nice and crisp after baking.

I love making these cookies now as a treat for my little guy because they are so simple to put together. I always have these items on hand. For the crispy rice cereal, I order mine in bulk from Azure Standard (they have brown rice, gluten-free). Also, if you don’t need this recipe to be dairy-free, I’m sure butter would taste excellent in it instead of the coconut oil.

How to Make This Recipe Gluten Free

As I mentioned within the recipe, I use my Gluten Free All Purpose Flour in this recipe to make it gluten-free. You may also need to make sure that you are using certified gluten-free oats in this recipe as well.

How to Make This Recipe Egg Free

Instead of adding the egg, add an extra banana in its place. Super easy, and it still tastes great! You may want to add a bit less sugar if you choose this option since the banana will add sweetness.

How to Store Leftover Cookies

Any cookies that you have leftover should be cooled completely and then stored in an air-tight container on the countertop or in the fridge for up to 4 days.

You could also freeze extra cookies. Just put them in a freezer bag and stick them in the freezer until you are ready to enjoy. Thaw on the countertop after removing from the freezer.

You can replace the coconut oil with butter, vegan buttery spread, or even shortening.

What is the secret to a crunchy cookie?

Crunchy cookies start out as a drier batter and then they bake a little longer so provide that crisp.

Can I leave out baking soda in cookies?

No, baking soda is one of the levening agents and needs to be in the cookie recipe to help it rise and not be a hard little hockey puck.
