Ingredients

  • 2 large over-ripe bananas, mashed
  • ½ cup plain Greek yogurt*
  • ½ cup butter, melted
  • ½ cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 350F, grease a loaf pan, or line it with parchment paper.

  • In a large bowl, mash the bananas. Add the Greek yogurt, melted butter, and eggs. Whisk to combine. Add the sugar and vanilla, and mix.

  • In a large bowl, whisk the flour, baking soda, and salt.

  • Gradually mix the dry ingredients into the wet ingredients until just combined.

  • Pour the batter into the greased loaf pan and bake in the preheated oven for 55 minutes until a toothpick inserted in the center comes out clean. *If the top of the loaf is getting too brown, cover it with a piece of tin foil and continue to bake.

  • Remove the banana bread from the oven and allow it to cool down for 15 minutes prior to removing it from the pan and slicing.

    I am a HUGE fan of this recipe. Baked for just 45 minutes. Split sugar into 1/2 brown sugar/ 1/2 white sugar. Substituted All purpose flour with Self-rising flour because it’s what I had, adjusted baking soda/salt for this (thanks, Google). SO YUM. Very fluffy, and crispy slight crunch of a top. <3 Feeling good about the slight added protein with 5% fat fa*ge Greek yogurt.

    Absolutely amazing! My favorite go-to recipe! I’ve already made this once & am now making it for the second time. 50 minutes at 350 was perfect for my first loaf, golden brown on top. For my second go around I’m going to take it out a little earlier than 50 minutes.
    This bread is perfectly moist. I opted for brown sugar & added chocolate chips & it’s still amazing!!!!

    boom! appetizing, crunchy, smooth, and perfectly golden top, super dense and rich loaf w plenty of moisture. cooked at 350 for 55 minutes, as directed, and (amazingly, banana bread recipes notoriously need adjusting), it was perfectly done, right on time. i opted to use white sugar, and honey flavored greek yogurt. used 4 medium bananas, as they weren’t crazy-ripe/mushy… used unsalted butter, and the 1/2 tsp salt + 1 tsp baking soda called for gave the bread plenty of saltiness. fab recipe, thank you so much for sharing!
