Here we are in the final week of the month long blogging marathon and this week’s theme is Blogger’s Choice. So we can post any thing we like. Though most of them are doing travel related posts, I wanted to keep this week also food related. And what would be my choice? Any guess?? Mine will always be egg free baking!! How many of you guessed right?? For the first day I wanted to share with you the much awaited recipe. Home made egg replacing powder. I have talked about so many egg substitutes in detail but each substitute works differently and each substitute has its own advantage and disadvantage. You just can’t close your eyes and add them instead of eggs. They need some changes in the recipe itself. But what if you can just substitute the eggs? I know that there are so many egg replacing powders available in the market. If you are in US, then you just can buy the Ener-G but what about serious bakers in India?

Before a year, I ordered an egg replacer online and used it until it was over but then I didn’t get it online also. Then some one told me about a source in Mumbai and I ordered from them. When I opened the pack, the egg replacer was split inside the pack. The supplier told me that it was the courier fellow’s mistake and the courier fellow blamed the supplier. Some how I lost my money and the replacer too. And in one forum I foud that there are also some who sell powdered eggs as the substitutes and we will never know. Should I take it to the lab to check? It is not happening. I just felt very sad that I couldn’t use the powdered replacer. But the blogger in me kept searching for a recipe with different words. And one fine day I just arrived at this website Whole New Mom. There was one recipe which looked quite easy. And when I read some reviews, there were so many mixed reviews. Some said that it worked like breeze and some said that it didn’t work at all. So there was only way for me to know the truth. I tried it myself.

This replacer has potato flour in the ingredient list and I searched for a source online. Yes we get it at Amazon. I ordered for a pack immediately and waited eagerly for the pack to arrive. By the time I also searched for tapioca starch but didn’t find it any where. So I used corn flour instead. For three or four months, I kept doing experiments with this powder. I also experimented with the quantity to be used for an egg. Some were great success stories and some turned out quite inedible. But I learnt about the powder a lot. It works best in cakes, pan cakes, clafoutis and breads. But you cannot use it in meringue. So never ever try. It just don’t work. Are you happy with what I found? Equivalent of 45-50 eggs

Ingredients:

Potato Starch – 2 1/2 cups

Corn Flour/ Corn Starch – 1 1/2 cups

Baking Powder – 2/3 cup

Baking Soda – 1/3 cup

Procedure:

In a jar, measure all the ingredients and add.

Using a balloon whisk, mix thoroughly until all the ingredients are incorporated.

Cover and store in refrigerator.

Quantities for Substitution:

1 Egg = 1/2 tbs of powder + 2 tbs water

1 Egg White = 1/2 tbs of powder + 1 tbs water

1 Egg Yolk = 1/2 tbs of powder + 1 tbs of water

You can add the powder to the flour and add the liquid along the liquid ingredients or mix both powder and water and add it to the liquid ingredients.
