In addition there’s not a better tool than the Instant Pot to cook dried beans, peas, lentils, wheat berries, barley, quinoa and other grains. If you’re looking to incorporate more vegetarian Instant pot dishes into your diet I’ve got several ideas to get you started!

Note: Some cheeses are not vegetarian, including Parmesan cheese. You can buy supermarket versions of vegetarian Italian-style hard cheeses. Just check the label to be sure it is vegetarian.

What Pressure Cooker Do You Use?

I used a 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.
