I was fooling around in the kitchen one day trying to make something different for lunch, and I came up with this keto cauliflower chorizo hash recipe.

I use riced cauliflower quite a bit in my recipes (, , cashew curried vegetable). For me it really can take the place for rice, at least most of the time.

Anyway, my husband ate some and really liked it, so I thought I’d share it with you today.

It’s very simple (as most of my recipes are) and it’s low carb (which many of my recipes are). Another nice thing about this recipe is that it really takes no time at all.

The 4 Ingredients I Used In This Recipe.

Today I am updating this recipe because I bought some chorizo from Porter Road (which you can read about below) and thought it would be great in this recipe.

So all I used for this is cauliflower rice, chorizo, spinach and pine nuts which you can see below.

I like to make my own cualiflower rice by chopping up a head of cauliflower. Then I place the cauliflower florets into a food processor and pulse until it looks like grains of rice.

It’s really easy and it taste better to me than store bought.

What Type Of Chorizo To Use.

Mexican chorizo is made from raw ground pork and spices, while Spanish chorizo is usually smoked sausage. I didn’t realize that there were two kinds until I read this article from the Kitchn.

Because this was loose ground pork, it made thisdishmore of a hash. I think if you used the Spanish cooked chorizo it would still be good but it would be different.

Where To Buy Good Chorizo.

I just joined Porter Road which is an online meat delivery site. Their meats are farm raised, have no antibiotics, no hormones and are really tasty!

I bought a couple meat samplers as Christmas gifts to my grown nephews and some chorizo and other goodies for myself.

You can also buy chorizo in some bigger grocery stores. I used to buy it at Aldi years ago but they no longer sell it.

Let’s Make Some Cauliflower Chorizo Hash!

Below you can see how easily it cooks up in a skillet. Here is how you make this tasty dish

  1. First brown the chorizo in a large skillet over medium-high heat.
  2. Then added the riced cauliflower, mix and sauté for about 5minutes.
  3. At the end added the minced spinach. Mix it around to wilt the spinach and take it off the stove.
  4. Sprinkle some toasted pine nuts on top and serve.

How To Toast Pine Nuts Easily.

To toasted the pine nuts, just add them to a dry pan over low heat and stir for a few minutes until they turn toasty brown.

Watch that they don’t burn. When they have browned, pour them onto a plate or piece of paper towel to cool off. If you leave them in the hot pan they will continue to brown and may burn.

As a substitute you can also try slivered almonds instead of pine nuts.

I love when my concoctions turns out good! The spices from the chorizo mix nicely with the cauliflower and spinach. While the pine nuts make this dish more of a pilaf.

This cauliflower chorizo hash is a quick and easy low carb dish. Simple, healthy, tasty and only 4.9g of net carbs.

Ingredients

  • 4 cups of cauliflower rice
  • 16 oz ground Mexican chorizo sausage
  • 1 ½ cup baby spinach, minced
  • ¼ Tablespoons toasted pine nuts

Instructions

  1. In a large skillet, add your chorizo sausage and cook until almost browned completely.
  2. Add in your riced cauliflower and saute for about 5 minutes.
  3. Meanwhile in another dry skillet toast the pine nuts. Watch that they don't burn.
  4. When the cauliflower is done cooking, add your spinach and mix until wilted.
  5. Toss in your pine nuts and serve.
  6. Note you can sprinkle some salt and black pepper if you wish but the chorizo usually has a lot of spice and I don't think it needs it personally.

      Pei, of course you can. Try some slivered almonds (they are my go to substitute for pine nuts) but really any type of nut will do or just skip it. Hope you like it!
