Who ever said ANZAC biscuits had to be made into biscuits?!! Its just as good in a slice too!
This is so yummy, chewy around the edges but soft in the middle. Of course being ThermoFun I just had to drizzle some chocolate on top too! :)
Do you know the meaning behind ANZAC biscuits?
It has been claimed the biscuits were sent by wives to soldiers abroad because the ingredients did not spoil easily and the biscuits kept well during naval transportation.

ThermoFun – Anzac and Macadamia Slice Recipe

Ingredients
- 150g butter, cubed
- 50g golden syrup
- ½ teaspoon bicarb soda
- 2 tablespoon boiling water from kettle
- 135g rolled oats
- 185g plain flour
- 220g brown sugar
- 75g coconut, shredded
- 70g macadamia nuts, roasted, coarsely chopped
- 100g milk chocolate melts
- 10g coconut oil
Instructions
- Preheat oven to 180°C. Line a slice tin approx. 20 x 30cm with baking paper. Boil water in the kettle (only need 2 tablespoon for the recipe).
- Place butter and golden syrup into TM bowl and melt 3 mins / 50°C / speed 1. Scrape down and melt a further 1 min / 50°C / speed 1.
- In a separate small bowl, combine bicarb soda and boiling water, stirring until dissolved. Add to TM bowl and mix 5 sec / speed 2.
- Add oats, flour, sugar, coconut and nuts and mix 20 sec / speed 3 / Reverse.
- Pour into slice tin and press mixture down using the back of a spatula, spoon or MC.
- Bake for 25 mins or until lightly golden and cooked through. Allow to cool in tin.
Chocolate Topping
- Wash and dry TM bowl.
- Place chocolate and coconut oil into TM bowl and chop 5 sec / speed 9.
- Scrape down and melt 3 mins / 50°C / speed 1.
- Fill a ziplock bag with the chocolate and cut a small corner to drizzle chocolate over the slice. Once chocolate is set, cut slice into pieces to serve.
To Clean Thermomix Bowl:
- Pour a glass of milk into TM bowl and mix 5 sec / speed 8.
- Heat milk 5 mins / 80°C / speed 4.
- Enjoy warm chocolate milk. No wasted chocolate!

I've just made these for the first time. As we have become used to only a little sugar I halved the amount in the slice. I tasted it before I baked it and it seemed sweet enough for us.
I love some of the variations suggested and will be trying lots of them in the future.Reply

As I made this for the umpteenth time today I realised this has become my go to slice! As I like it to be relatively thin, this quantity makes enough to fill two slice trays - winner! I love the versatility of it too. Today I put silvered almonds and choc chips in it, and still put the chocolate on the top. A double dose of chocolate can't hurt! I have used other nuts as well as the macadamias, and grated orange rind is nice in it too. Great recipe, thanks, Leonie

I made this for ANZAC weekend and took it to work on Monday. The staff said they were going to nominate me for MKR. Scored a 10 with all. Thanks, will keep this one in the favourites.
