Instructions

  1. Bring vegetable broth to a boil and pour over the cooked miracle rice. Set aside.

  2. Heat fish sauce in a large skillet and add green onion, carrot, both gingers, garlic powder, pepper, and miracle rice. Simmer until most of the liquid is dissolved. Add bean sprouts.

  3. Add eggs and egg whites and stir to cook and incorporate into the rice.

  4. Add the aminos and serve while hot.

Recipe Notes

You can substitute ¼ cup bell pepper for shredded carrots.

    I made this yesterday with a slight variation – i didn’t have bean sprouts or carrots so i just used some sweet peppers (like that package of a bunch of them in red, yellow and orange) and it was really good! I did the 6 Tbs of Aminos and it was a little salty for me, but still amazing! I’ll definitely make this one again!

      I know me too! My son calls the smell “foot” lol- we added it to some chili the other night and the chili tasted awesome to me and hubby but my son is more sensitive to it being 8 and he was like, “oh great, we’re having foot again for dinner” :)- – Rayzel

    OMG. This recipe saved me from giving up. I’m eating it right now. I didn’t have miracle rice in hand so I used tofu shirataki noodles but I only used about 5 to 6 oz instead of the 7 I would have used for the rice. I also was afraid of how salty the aminos would be so I only used 4Tbsp other than that, I followed the recipe and it taste so amazing thank you so much!!???????? *Note- boiling the shirataki noodles for 3 minutes helps with minimizing the weird taste and smell but unfortunately, there’s nothing you could do about the fish sauce ???????? I was saying “there’s No Way I’m Eating This” but I closed my eyes and was pleasantly surprised ????

    I didn’t have any fish sauce so I made it with some Japanese citrus dressing and for the veges I only had fennel and onion. Sounds weird but better 2nd day. I would never have thought of using eggs. But I really enjoyed it. I am making it again tonight.

      Hmm good question! I think you could probably replace the calories in 1 whole egg with shrimp and use the rest of the egg whites.
