With every holiday season, we plan on being more organized. I make lists long before Christmas with things we need to do, things to have to buy and even plan our menu weeks in advance. And with every year we have last minute things popping up, last minute events we need to attend, someone gets sick when you least expect and of course, at least one dozen of cookies get burn the night before a cookie exchange.

It throws me off and I’m not an easy one to get back in the game like nothing happened.

That’s why I need cake in my life. And not just any cake, but one coffee cake made with strong brewed coffee and dotted with mini chocolate chips in and out.

A few days ago I hosted a cookies exchangeget together. Of course, I was juggling several things in the same time and completely forgot to set the timer for the cookies. Yeah, it wasn’t one of my proud moments.

With no desire to make a new batch of cookies, I relied on one my comfort sweets. Coffee cake! Everyone loves a good coffee cake, but what makes mine extra special is the addition of the coffee in the cake batter and the coffee icing on top!

My friends raved about it so much that I made each one of them a chocolate chip coffee cake with coffee icing to give few days later.

Ingredients

    Chocolate chip coffee cake

  • 3/4 cup butter, room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs, room temperature
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1/4 cup strong brewed Dunkin Donuts chocolate flavored coffee
  • 1/3 cup mini chocolate chips
  • Coffee icing

  • 1 1/2 cups powder sugar
  • ~ 2 tablespoons strong brewed Dunkin Donuts chocolate flavored coffee
  • additional mini chocolate chips

Instructions

  1. Heat the oven to 350F. Grease an 8" round cake. Set aside.
  2. In a mixing bowl add the butter and sugar. With the paddle attachment on, beat on low speed until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs, one at a time and the vanilla extract.
  4. Alternately, add the flour, baking powder and salt with the coffee. Stir until just combined.
  5. With a spatula, fold in the mini chocolate chips.
  6. Spoon the cake batter into the prepared baking pan and bake in preheated oven for 50 minutes to 1 hour until a toothpick inserted in the middle comes out clean.
  7. Remove from the oven , let the cake cool for 10-15 minutes before removing from the pan to cool completely on a wire rack.
  8. Make the coffee icing

  9. In a small bowl combine the powdered sugar with enough brewed coffee to make the icing. Pour it over the cake. Scatter mini chocolate chips, if desired.
  10. Slice and enjoy!
